•1 ¼ cup all-purpose flour
•⅔ cup granulated sugar
•½ teaspoon baking powder
•¼ teaspoon baking soda
•¼ teaspoon salt
•⅔ cup olive canna-oil
•½ cup Greek yogurt
•2 large eggs
•3 tablespoons lemon juice
•Zest of one lemon
•Preheat oven to 325ºF and grease a 9” round pan.
•Mix the dry ingredients together in a large bowl.
•Create a well in the flour mix and add olive canna-oil, greek yogurt and eggs. Whisk into the flour mixture.
•Add lemon juice and zest and stir until completely combined and there are no lumps.
•Pour batter into prepared pan. Bake for 35 minutes or until a toothpick inserted comes out clean.
